Hi

It's not just the hot enough to be lockable that you are after. You also are after a condition where you can tell the difference between several transitions. Locking to the wrong one isn't a good thing.

I suspect they do something like: wait for oven to cut back, then delay for xxx seconds. That's a lot easier than deciding based on a temperature sensor reading.
