I would use epoxy, but it's not easy to work.
No question that Epoxy will adhere better than polyester. Epoxy can be applied
to poly, but not poly over epoxy! If any edges are exposed, poly will likely
lift. I have found poly much easier to work...epoxy is prone to sagging and my
experience is that it is tough to sand smooth the next day..polyester seems to
get hard faster and is easier to sand the following day. Even on rounded cabin
top decks,mostly horizontal, I have had epoxy sag...
With poly you can add a bit of extra hardener. Expoy dries slower so poly has
an advantage in colder weather. Disk sander rather than orbital is MUCH
faster. A plastic cover with electrixc heater under can help a lot to speed
curing.
Be sure to use a fiberglass compatible putty for screw holes, wood seams,etc,
otherwise bubbles will ensue. Never the white putty supposedly ok for the
job!!Automobile putty, gray in color, is fast drying and a good choice.
Minimal shrinkage, fast drying, can be sanded in a hour or two. For any
corners or plywood seams, tape first, sand, then cover with area cloth for
extra strength to avoid splits. Even plywood will work along seams, edges and
crack single thickness resin/cloth.
Many cloths available..I have used dynel because it wets better than
fiberglass cloth, but there are other choices. Defender has several.
Fiberglass cloth can be difficult to remove air bubbles from.
