I need to remove my galley counter top to get at some paneling, so I started to think about what I else I should bundle into this project. One thing that comes to mind would be to replace the stove top with a convection one. Did a search but did not find any tops that install and use 120VAC. Any suggestions from the team?

Jonas,
we considered these for my new boat.
A two "burner" unit is 3200-3600 watts. The Admiral thought that two was too few.
4 burner unit was about 7Kw
We had a friend who had a 4 burner unit and taking actual data with a clip on amp meter, we found that 3 units during "normal" use was drawing just under4 KW.
Since we had no desire to run gen set to cook, we opted for a LPG 4 burner unit.
In the end, that was the wise choice as it allows for an alternative cooking "fuel" to electricity (which still powers our microwave/oven.).
