Garrett, we had the same problem with our CO detectors.  I spoke with the
manufacturer and was told that they are much more sensitive to H2 than CO.
We have wet cell batteries so this was the source of the H 2.  I added
on/off switches to both our detectors (one in saloon and one in the
stateroom) and only turn them on if we are running the genset or engine if
we are inside with the boat closed.

Our batteries are wet cell, too. (6 GC's, 2 starting, and one D-8 backup.)
They are all under the pilothouse, i.e. just behind the bulkhead on which
the CO detector is mounted, and when we are in a marina, they are under
constant charge from our Heart Freedom 2500, so your explanation makes
sense.

Between the newly fiberglassed muffler - whose odour my wife's nose can
still detect - and the batteries, I believe we have the answer(s) we need,
and several good suggestions as to how best to deal with the problem.

Of course, I won't forget about the oven door and the chili(!), and I thank
everybody for putting our minds at ease.
