Rudy and List Members,

Ref a pizza oven I find a 1/4" thick piece of aluminum plate cut to be to leave a 1" gap, or more, all around it on your covered gas grill is a great way to cook pizza as well as rustic bread loaves.  The aluminum heats quickly so you save propane yet has enough specific heat to crisp the crust but prevents the burning that often happens when you cook directly on the grill grate.  IT is easy and light to store and isn't fragile.  Beats a stone all to pieces inho.

All the best,

Gary Hagstrom

If your aluminum is coated with something like anodizing to make it non-reactive, it will be less likely to leach into the food.  Don't cook acidic stuff like tomato paste upon it because it will alter the taste in an unpleasant manner - don't get sloppy with the pizza sauce.
