A few questions?

Do you have a power windlass?  Will it take a nylon rode as well as chain?

Do you plan to visit the Pacific NW with your boat?  Inside passage?  Lot's
of anchoring?

If you really intend to occasionally anchor only in protected, relatively
shallow areas in SoCal, then I would remove the chain (but keep it) and use
nylon rode with a chain piece at the anchor end.

The boat was purchased with 240 feet of anchor chain which gives the vessel

"bow-down attitude when at rest. Is it worth carrying all that weight of
chain or would I be better off with rope?  We do all our boating in Southern

California with a usually pacific Pacific ocean and anchor only if there is
no mooring available.
