Hi Paul,
there's the GNU Radio wiki, which is the number one information source for everything related to GNU Radio.
It has nice tutorials on writing your first signal processing application, and writing your first GNU Radio blocks in C++ and python.
We use a very active mailing list, discuss-gnuradio@gnu.org, to exchange information and experiences; you should definitely subscribe to that, and watch it for a few days just to get a feeling of what's going on.
And then there's the #gnuradio IRC channel on freenode, which has a lot of the people who populate the mailing list, and is always a good forum to ask a quick question.
So: head over to http://gnuradio.org/redmine/projects/gnuradio/wiki, enjoy "How to write Python applications" and "How to Write a GNU Radio Signal Processing Block", and in doubt, write an email to aforementioned mailing list.
