On the subject of PDA's, any recommendations for devices that will work with birding programs without a phone.

National Geographic has a handheld birds application for Palm devices
(which I think you can also run on Windows Mobile devices with the aid
of another program). I had the Palm version and used it quite a bit,
but I'm not sure if i would fully recommend it. However, it's not
official yet but I believe they are coming out with a mobile field
guide for the iPhone and iPod Touch as well within the next several
weeks.
