Makes sense, but that's a new one to me!
Why not make a nice Starboard cover?  doubles as a cutting  board.
Otherwise, I bet you'll be touching up painted stainless a  lot.

I think I would agree on the cover. Starboard is an inexpensive solution. In
my galley, I used Corian to match the counter tops. Added a fair amount of
food prep space. Easy to make either way and you can find Corian remnants via
google.

Aside from touch ups, most of the epoxy products I am aware of are not UV
stable and have a tendency to yellow and/or chalk over time. Given that the
sink gets substantial sun exposure, this will probably be a concern.
