We are also planning on the GE Microwave/convection oven approach to
reduced appliance space. As a test of this feasibility, we cooked a couple
of dinners at a friends home using their GE unit. We fixed a casserole, a
roast, a cake, and the kids insisted on testing cookies, too. We found
that all cooked just as it had in our wall electric oven, perhaps just a
little faster. Based on our test we have chosen to use the space of an
oven for more storage.
For a cooktop, we are also going electric which allowed us to install a
Jennair range/grill with interchangeable burner cartridges. When we want
to broil/grill we put in the grill cartridges, for other cooking we use the
burners, most time we configure for half grill/half burners. We've used
this unit in our home for years and it has been great for grilling anytime
we want.

In order to get extra cabinet space in the galley I was considering
going to an electric 3 burner stove top and a convection oven/microwave
unit to mount on the overhead - GE, Sharp etc.
