It is evident that some equipment in this boat was installed in the aft port
quarter of the bilge under the cockpit deck before the deck mold was added
to the boat during construction, and I am going to have to install a deck
plate/hatch in order to access these items. There is a 20" by 24" area
which is clear of any under-deck support structure where I could cut out the
deck for a hatch. I would like to make this installation as low profile as
possible, and it is going to have to withstand regular foot and deck chair
traffic.
Recommendations would be welcomed.

To replace the old Westerbeke engine on Pooh with a modern John Deere, it was necessary to cut a large hatch in the floor of the center cockpit. It was one of the few things I did in the conversion of Pooh from ketch to trawler that was easier than expected.
The floor consisted of a sandwich of 3/4" ply with 1/4" of glass top and bottom. I used my old (30 years) Craftsman saber saw and a new blade made for cutting fiberglass (from Jamestown, as I remember). The blade was set to a 30 degree angle, and the cut took less than 30 minutes. After installing the new engine, the hatch was permanently reinstalled with thickened epoxy on the 30 degree beveled surface, and 9 oz glass tape and epoxy resin on the top and bottom surfaces. Easy peasy, and nearly as strong as new.
