The Orange Coast school of Sailing and Seaman ship has excellent courses--and I would put it at the top. In the past I have heard good things about the Seattle Maritime Academy--but the current classes seem limited to CG licenses. Chapman's School I have some plus and minus thoughts about. There is an Annapolis school of Power boating.

You can purchase straight pattern bits with bearings at the top. Then, using the hot glue method, you affix a guide strip on top of the Corian and the bearing will follow the guide strip. As Joe says, you may want to remove only a 1/16" at a time. A tablesaw can work for cutting Corian to dimension.
